CAKE!!!

Yesterday I made a cake without refined sugar! And believe it or not, it was actually really good. I used natural applesauce and 100% apple juice concentrate and a little agave to sweeten it. It only needed a little bit of oil because I was using so much liquid. It was a fun experiment. And we topped it with strawberries and blueberries. If anyone wants the recipe, feel free to ask me.

I love fruit sugar! So far we've done pretty good at not eating refined sugar except for Saturday, David "accidentally ate cheesecake" and I "knowingly forgot that chocolate had sugar in it"...probably because we weren't together to support each other. Other than that we've been good and I've enjoyed creating sweet things using fruit. I'm going to try using honey. As for plastic bags....we'll get back to you on that one.

  2. 1/4 cup oil
    1/4 cup agave
    1 egg
    3/4 cup apple sauce (no added sugar)
    1/2 cup milk
    3/4 cup apple juice concentrate (no added sugar)
    1/2 tsp vanilla extract
    1/4 tsp almond extract
    1 1/2 cup flour
    1/2 cup whole wheat flour
    1 tbsp baking powder
    a pinch of salt
    1 cup chopped almonds

    1. Mix together oil and agave (room temp). Add egg, apple sauce, apple juice, milk, vanilla and almond extract (apple sauce and juice at room temp, and put the egg in some warm water to make it room temp).
    2. Mix together fours, baking powder, salt and almonds. (I'm giving the recipe of how I came up with it, but it was a little runny so you could add some more flour...maybe another 1/4 cup?).
    3. Add the wet mixture to the flour mixture and don't over mix.
    4. Bake at 350 for 45-60 mins? Mine was starting to get a little brown around the edges in my glass pan so I took it out when the inside was still a little moist, but it ended up still being pretty good.
    5. cool on rack.
    6. Put fresh cut strawberries on top and enjoy.
